Much & Link Love: Christmas Week

Two weeks left in the year. You know when you are celebrating Christmas, the year is almost gone. I leave tomorrow to head to the home state of Florida, by way of Georgia.
1. Tim Tebow had a great first quarter of his first NFL debut yesterday. Unfortunately, he plays for a really bad team. Maybe him and Urban can hook back up in then NFL and all will be right with the world. Then maybe Danny and Steve can hook back up in the NFL and the two pairs can play against each other in the Super Bowl and then we’d really know who is the better pair. That’s about all I have to say about the NFL this week – except the Colts did win – yay!
2. I had a very relaxful weekend and I loved it!
3. I’m so glad Ben and Brittany Salmon are in my life. Just sayin’.
4. The three ladies who work in our kid’s min here at Providence are a blessing to me. When I ask questions, need help, or even just witnessing their ministry to the kids and parents that come through these doors.
5. Successful writing day at Bou on Saturday afternoon. Knocked out what I needed to do and engaged two new people that I had never talked to before.
6. Get to hang out with some great college girls today and tomorrow and then friends tomorrow through Sunday – and family of course. Then, I’ll be ready for some down time next week.
7. I’m not satisfied. Never should I be satisfied. I’m more satisfied with some things at the end of this year, less satisfied with others.
8. Have you been thinking of New Years Resolutions (or goals)? I personally like goals better than resolutions? Don’t know why…both can be unattained.

2. Danny hits on the the somewhat stupid tradition of writing Christmas letters.

4. You know Christmas couldn’t come and go without John Piper saying something about Santa?
5. Think I’ll be making these for the first Gathering of the year in 2011.
6. I’m surprised Vogue hasn’t gotten some slack for this because it might resemble the Virgin Mary?
7. Let’s continue to pray for Liam Neeson’s salvation. Even though he isn’t saved, I do love him as Aslan.
8. I love this Simple Advent Calendar.

Chocolate York Cookies Sandwiches with Mint Buttercream Filling

Deep chocolate with york peppermint candies and a mint buttercream filling. Yum.
I took a hint for the cookie from The Novice Chef and then made it my own. Thank you!
Here you go: great for kids of all ages…

1 cup all-purpose flour
1/3 cup unsweetened cocoa
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
5 Tbsp butter, softened
3/4 cup sugar
1 large egg
1 tsp vanilla extract
1/3 cup York mini candies (the ones that look like m&ms)

Cream wet, add dry. Bake at 350 for 9-11 minutes. Let cool completely.

1 sticks unsalted butter, softened
1.5 cups powdered sugar, sifted
2 t milk
2 t peppermint extract

Cream butter for about 5 minutes. Add in sugar and keep beating for about 5 total minutes. Add in milk and extract. Beat a little more till light and fluffy.

Then put buttercream in between 2 cookies and enjoy!

Taste of the Holidays: Cranberry Bliss Bars

If you are a regular at Starbucks during the holidays: you know pumpkin and peppermint lattes, gingerbread mochas, and cranberry bliss bars. You know…the triangle cut iced wonderful bars of cranberry deliciousness. Well, here is my take. They turned out very moist and not as dry and crumbly as Starbucks…probably because these were freshly made.
Enjoy.

2 sticks unsalted butter, softened
1 1/4 cups light brown sugar, packed
3 eggs, room temp
1 1/2 teaspoons vanilla
1 teaspoon ginger
1/4 teaspoon salt
1 1/2 cups all-purpose flour
1 cup dried cranberries
6 ounces white chocolate chips,

Frosting

4-ounces 1/3 less fat cream cheese, softened
3 cups powdered sugar, sifted
4 teaspoons lemon juice
1/2 teaspoon vanilla extract

1/3 cup dried cranberries

Cream sugar and butter. Add eggs and vanilla. Combine dry and add to the creamables. Fold in cranberries and chocolate. Bake at 350 in a well-greased 9×13 pan (I also used foil to line the pan, then sprayed it) for 35-40 minutes.
Remove and let cool, completely. Cream the frosting ingredients together and top on the cooled cake. Before the frosting dries, sprinkle the dried cranberries on top.
Enjoy!

Much and Link Love (December 13 edition)

1. Craziness. Always good to start out a post like this.
2. By Wednesday night, I’ll have attended 6 Christmas concerts, cantatas, worship services, whatever you want to call them. Be on the look out for a synopsis of all of them when finished.
3. My eyes are tired. That tells me something. Just don’t know quite how to remedy it right now.
4. Much baking this week: cranberry bliss bars, toffee sugar cookies, red pepper hummus, toffee dip, pork tenderloins, mac and cheese, gingerbread chai bars, roasted green beans. Think that may be it.
5. Every day, every bite struggle. Thnk on the gospel, not on this body.
6. First day of Gold’s Gym tomorrow.
7. Its cold. Yes, I’m just stating a fact, not necessarily complaining.
8. Thankful for men in my life who set a high bar. I’m graced with their presence, encouraged by them, and wait patiently for God.
9. I must write children’s curriculum because I have an empty gatorade bottle sitting on my desk, filled with rice and small plastic objects. Thankful for object lessons.
10. This week: a party, NCIS with room, mani/pedi, concert, lunch with a friend, dinner for friends, Narnia movie night, brunch with a friend, 2 more lunchs with friends, trip to the museum for my room’s bday, and church. Sounds like a full week!

Much and Link Love (December 6 edition)

Second week of December and it actually feels like it out there. Here we go:
1. O Holy Night is def my fave Christmas (sacred) song. More thoughts on it later this week.
2. Reilly Band (violin rock) and Barlow Girl were both awesome last night. Enjoyed the drive, blaring country music and Sojourn Advent, dinner with a friend, and then music and conversation.
3. Fave country songs right now: anything by Zac Brown, Put You in a Song by Keith Urban, Rain is a Good Thing, Why Wait by Rascal Flatts, Stuck on You by Sugarland.
4. Reading this week: Philippians, John, advent book by David Horner, Acts commentary by Sproul, God’s Two Kingdoms, Eat Pray Love, and Kitchen Confidential, and any missions book I can find while working on Quarter 2 and 2 resources on missions.
5. I miss the weekly communion at Sojourn.
6. I loved the snow on the ground this weekend. Beautiful driving down Duraleigh with snow topped trees that were just brilliant reds and yellows. It won’t get out of the 40s this week. Sad times this cold stuff! 🙂
7. Fun things on tap this week: Parker and Otis (cafe in Durham), Getty concert, planning day, research day, lunch with staff ladies, hanging with a friend, dinner at a pastor’s house with family, party on Thursday night and day off on Thursday (which is always good), Christmas programs, dinner out, photo shoots (definitely the busiest of the whole month!)
8. College football is almost over. Sad times. But, this was not a great football weekend, NFL or NCAA. Only Bob Stoops pulled it out for me! Florida got a good bowl game and the Carolina v UT will be a good game too!

Pomegranate White Chocolate Chip Oatmeal Cookies

Oh, bring on the holiday season. I love baking for things during the holidays…trying new festive recipes that get out of my kitchen in a hurry. These will be gone tomorrow! 🙂 And I did much better on tasting them than the buttercream sessions earlier in the week.

Pomegranate White Chocolate Chunk Cookies

1/2 cup unsalted butter, softened
1/2 cup light brown sugar
1/2 cup white sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cup all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup old fashioned oats
1 cup white chocolate chips
1 cup pomegranate arils

Cream butter and sugars, add egg and vanilla. Combine dry ingredients and add to the creamed mixture. Fold in oats and white chocolate. Fold in (gently) the arils. They will pop, but you want them to pop in your mouth, not in the dough.
Spoon onto sprayed cookie sheets and bake at 375 for 10 minutes.
Enjoy the pop of tart and the creamy goodness of white chocolate and the chew of oats. These are definitely a holiday winner!

Dorie Greenspan's Quintuple Chocolate Brownies

A friend who had one of these brownies said they were like fudge. Not fudge brownies, just fudge. I’ll take that as a compliment. These were delicious. I made them to celebrate a friend’s birthday. She liked them with some coffee ice cream. I just used dark chocolate sauce and cool whip. Either way – just eat them. Thank you Dorie.

1/2 cup flour
1/4 cup unsweetened cocoa powder
1/2 tsp salt
1 stick butter
3 oz unsweetened chocolate (I used baker’s)
3 oz bittersweet chocolate (I used hershey’s dark)
2 T coffee
1 cup sugar
3 eggs
1 t vanilla
6 oz milk chocolate chips (I used hershey’s milk)
1/2 cup chopped walnuts (down from 1 cup)

Glaze:
6 oz white chocolate (I used hershey’s white)
1/3 cup heavy cream

Sift all the dry together and set aside. Melt chocolate and butter and coffee over medium heat. Add in sugar. Add in eggs one at a time, add in vanilla. Add in dry. Fold in nuts and chocolate chips.
Bake at 325 in greased and foiled square pan for 35 minutes (I had to cook mine for another 9), so just check it. You don’t want to overcook.

Cool for 20 minutes. Flip out onto cooling rack. When completely cool, then glaze. Heat cream to boiling (watch carefully as not to scald), pour over white chips, then pour over brownies. Set in fridge to chill for at least 20 minutes.

Chocolate Chip Nutella Cookies

Finally bought some Nutella when my parents were here over the summer. Got around to using it tonight for these yummy cookies.
Chocolaty – with a hint of hazelnut goodness known as Nutella.

1 1/2 sticks of unsalted butter, room temperature
3/4 cup of brown sugar
3/4 cup of white sugar
1 cup of Nutella
1/2 teaspoon of vanilla
2 eggs
2 cups all-purpose flour
1/4 cup of unsweetened cocoa
1/2 tsp baking soda
1/2 tsp salt
1 cup of chocolate chips

Cream, then combine dry. Fold in chips. 350, greased cookie sheet, small cookie scoop, 11-12 minutes depending on cookie sheet and other variables. Mine cooked perfectly at 11:30, but check it the first time around at around 10 to see how far you have to go to get that perfect doneness.

Sara Foster's Blondies

Here is another good blondie recipe from my Durham/CH cafe friend, Sara Foster. These make a lot so I’ll be dishing them out to folks tomorrow.

4 cups flour
1 1/2 tsp baking powder
1/2 tsp salt
3 sticks, unsalted butter, softened
4 cups packed brown sugar
4 eggs
1 T vanilla
2 cups semi-sweet chocolate chips
1 1/2 cup chopped pecans

Combine dry. Cream sugar and butter, add in eggs then vanilla. Mix with dry. Fold in nuts and chips.

Bake in greased 17×12 shallow pan. Press the batter into the pan. Bake for 35-40 minutes at 325. Enjoy!

Apple Walnut Maple Muffins

Sara Foster is my go-to muffin lady. These were good, very fall like.

3 cups flour
1 T baking powder
1 tsp soda
1/2 tsp EACH salt, nutmeg, allspice
1 tsp cinnamon
1 stick butter, unsalted, softened
1/4 cup canola oil
2 eggs
1/2 cup sugar
1/2 cup Grade B (preferred) maply syrup
1 c milk
2 granny smith apples, peeled, chopped
1 cup chopped walnuts

Combine dry, set aside. Cream wet together (up to syrup). Combine wet with dry, alternating dry and milk. Fold in apples and nuts.
Bake at 375 in greased muffin tins for 30-35 minutes.
Enjoy!
These would probably taste really yummy served warm with maple syrup drizzled over the top. I had to take them somewhere, so I couldn’t do that.
