Hooray for a Monday off (well, I really don’t work, so not much change here) and the unofficial start of fall.  I’ve got some eating healthy to do this week.  My mister has some stuff going on with work so the littles and I will be eating our meals by ourselves for a few days at night.

I have some leftovers to send with the mister for lunches: beef stew, triple b mac and cheese, cream of celery soup (recipe coming soon), and vegetarian baked ziti.  And this week I’ll be making:

Spaghetti Casserole

Lots of green smoothies

Lots of salads

The boys faves: chicken nuggets, fish nuggets, veggies, fruit, sandwich meat, pbj, etc.

Making these muffins (it is one of our rotations for breakfast along with oats, yogurt and granola and fruit, and cinnamon toast)

Limes & Menu Making

Greetings folks at the last day of August.  I wanted to share a little about how I go about planning my menu each week, and remind you still have until tomorrow to enter my 10 year blogging giveaway, and give you the menu for the week.

Here is just a few steps in my menu planning:

  1. Ask my mister if there is anything that he would want for food this week.  He usually gives me one or two specific things so I try to always mix those into what I’m already planning.
  2. I have my go-to food blogs and always some cookbooks on hand to peruse and see what looks yummy to me this week.
  3. Think about our schedule and our diet needs for the week.  Sometimes my husband has two days off, sometimes only one, so that plays a factor.  Also, we are on the go…so I like healthy and portable if we are going to be gone close to lunch time.
  4. I write down the recipes I want to make and make a list.  Then, I hit my pantry and fridge to see what, if anything, I have off that list so I don’t duplicate it.  Then I put that revised list into the notetaker app on my android.  This is so much more handy to me than paper and pen.  I can just delete as I go with one finger.  Not needing to balance paper, pen, grocery cart, and two little boys who are reaching for shelves or hitting my heels with the little grocery cart.

Beef and Vegetable Soup.

Pear Salad

Welcome to the end of another month.  Where I clean out my fridge and freezer and dig way deep in the pantry.  Going to try to make ends meet another month – but do so in a tasty way!

My mister only asked for one meal this week so he is getting what he asked for – steak (ribeye) and potatoes).

Making this quiche (without the crust and adding in some veggies)

Making some healthy chocolate zucchini bread for my misters’ breakfast.  They can down some bread and muffins in the morning, so I might as well make it at healthy as possible.

I’m thawing some chicken.  This soup is calling my name.  Avocados and lime in a bowl – yes please, especially with my guacamole recipe coming out on Wednesday!

Since I’m trying to stick to paleo this week, this is a perfect easy crockpot meal that will be perfect by itself with greens or on a salad.  It will also be good for burritos or enchiladas for my misters who love flour tortillas!

Banana Pudding Cheesecake

Two things are driving my menu this week:

1.  My mister is working long hours and needs foods that he can eat at his desk, probably 2 meals each day.  That means I get to eat a lot of my salads alone – but I need to make meals that can keep him full for those long 12 hours days.

2.  I’m trying to do better about making a meal plan and sticking with it so my boys don’t eat so many chicken nuggets and french fries.  If I have quick dinners already prepared for when I walk in the door with them then I will be less tempted to eat fast food because it is quick.

Chocolate Buttercream Cake

This week I’m still cooking normal for my misters, but I’m still trying to go without breads or pastas or sweets, so we eat a little differently then we normally do.  My mister’s metabolism is such that he still needs carbs, so I make some things just for him!

Zucchini Muffins

Pioneer Woman’s Chicken Spaghetti.  This was probably the first PW recipe I remember making back in 2008 when I made it for a friend’s meal after she had her baby.  She loved it.  My boys thought it was ok.  My husband thinks he will love it.

Green Berry Smoothies and Strawberry Beet Smoothie

For Cinco de Mayo we are doing buffalo chicken tacos (but I’m making my own buffalo sauce) and guacamole.  Later in the week I’m doing some salsa verda chicken.

Individual egg quiches are always a winner with my family.

Pink Ombre Cupcakes

I’ve actually made a full menu this week and I’m trying not to eat out as much (especially with the boys).  I’ve also done some things prior to menu planning in order to help us save money.

1.  Start with my freezer.  Since it is my smallest place for food, I don’t like to let it get too crowded (maybe in a few more years I’ll have room for a deep freezer).  Then I plugged in some ingredients into Pinterest and came up with a few meals.

2.  I made a shelf in my pantry for all the items I will need this week.  That will help to ensure I have everything I need and also help in time management.  It is much easier to look on one shelf than 5 shelves, especially with two toddlers wanting to help.

English Muffin Pizzas (Little Chef recipe coming soon)

Vietnamese Chicken Salad.  Good thing about this salad is the one thing I needed to buy was some of the produce.  I love having a diversely-stocked pantry and spice cabinet

This is a bit of a different week for us, but I still always want to be about using my creative nature in the kitchen for my family and others.

And lest you think I always cook, the drive-thru ladies at our neighborhood McDonalds and the guy at Wendy’s know us!  And our boys love making them laugh and saying hello!

Spring Peep Cupcakes

We have a busy three weeks ahead of us.  There are two separate trips for us and Eric’s work, and Easter which is always busy for him, visitors coming in town, some art projects due.  Fun times.

Since I’m heading to the Carolinas this weekend with the boys, I want to make sure that the mister won’t starve while we are away.  So here’s what will be in the kitchen:

Apple Peel

I have a love hate relationship with Pinterest and Instagram.

Pinterest gives me so many options but sometimes the recipes just aren’t any good. Then I’ve wasted a meal and may not even serve it to my family and resort then to pbj or cereal!

Instagram shows me lovely ways to style food and tells me what food days are coming – and I usually tend to bake or cook something that I don’t need.  But its fun!

We love brinner at our house and I have tons of eggs in the fridge.

I do love to bake with the boys and these will be a fun treat to have in the house.  I just can’t eat them all!

Love fish tacos.  Nothing beats grilled or fried mahi but we have swai so I will use it.
